I think this recipe was printed in LL Bean, or somewhere equally surprising. Here's a way to take something healthy and make it almost unrecognizable. I love it.SPINACH BALLS
1 box frozen spinach or 1 bag fresh spinach, chopped & cooked
1 cup bread crumbs
1 egg
1 small onion, diced
1 tsp garlic powder
1/4 cup butter
1/4 cup grated parmesan
Combine all ingredients and chill for 1/2 hour. Roll into balls, place on a greased cookie sheet and bake for 20-25 minutes at 350 degrees F.
